… or you’re having a bad hair day…
… or you’re just really tired.
In fact, I call it a “recipe” in “quotes” because there’s not even any cooking involved.
For this Buffalo Chicken Salad, you let the grocery store deli do the cooking for you (breaded chicken tenders). All you have to do is chop them up…
… toss them with a few tablespoons of bottled buffalo sauce…
… and serve on top of iceberg lettuce, bleu cheese dressing, and julienned carrots & celery.
Of all the easy recipes I’ve been posting lately, this might be the number one EASIEST. It’s perfect for busy weeknights, especially in the hot summer months ahead. So put on your neon shades…

EASIEST-EVER BUFFALO CHICKEN SALAD (pdf)
- Store-bought breaded chicken tenders (I do 2 per adult)
- Bottled Buffalo-style wing sauce to taste
- Iceberg lettuce, rinsed and chopped
- Bottled bleu cheese or ranch dressing
- Shredded carrots and/or chopped celery
Chop chicken tenders into bite-size pieces. Toss with Buffalo sauce.
In a large bowl, toss lettuce and vegetables with dressing. Top with chicken tenders.
