To celebrate the Luck of the Irish, you should definitely make this Corned Beef and Cabbage on St. Patrick’s Day.

And for dinner the next night, you should extend your luck by using the leftover corned beef to make these really awesome sandwiches. 🙂

Leftover corned beef*
Sandwich rolls, toasted
Swiss cheese slices
Cole slaw
Thousand Island Dressing

*You could also make these sandwiches using corned beef slices from the deli. I recommend heating the slices in a nonstick skillet.

Heat corned beef on the stove over low heat until hot. Meanwhile, lightly toast sandwich rolls. Top each roll with a slice or two of swiss cheese, followed by hot corned beef, cole slaw, and dressing. Serve with dill pickle spears.
