If pizza.com is to be believed (hey, they sound reliable to me), the night before Thanksgiving is one of the most popular days of the year for ordering pizza.
Makes sense to me. But as you know, I start my Thanksgiving preparations a week in advance.
And while I personally would be willing to order pizza every night for a week, Hubba Bubba would not. So the week before Thanksgiving is generally filled with “healthy” take-out (grilled chicken kabobs and hummus are popular in our house) and super-easy, minimal-mess dinners.
This “recipe” will disappoint my Philly-based readers because they all already know this one. But when Mike (who, as you may know, was born in raised in the City of Brotherly Love, aka the sandwich-eatingest city in the nation) introduced me to hot roast beef sandwiches, I was hooked.
And any time we need a delicious but quick dinner, this is one of our favorites.
HOT ROAST BEEF SANDWICHES
1 box beef broth
6 oz. deli roast beef per person
1 sandwich roll per person (toasted, if desired)
Sliced provolone cheese
Roasted red peppers
Bring beef broth to a simmer over low heat in a heavy pot. Add roast beef, cooking until hot. (This only takes a couple of minutes.) Meanwhile, top sandwich rolls with provolone cheese. Add hot roast beef and roasted red peppers. Serve with a side of jus for dipping.
OK and I admit — this Southern girl likes a little mayo on hers.
