Some days you just don’t have any time.

Maybe you work twelve hours a day (like I used to – no thanks!).

Maybe you are a busy attorney with a busy husband and the cutest baby ever (hi, Seester!).

Or maybe there is a Real Housewives marathon on TV and you are too preoccupied guzzling wine and pulling out people’s weaves in celebration to be bothered with cooking dinner.

Or maybe you just don’t feel like cooking today.

Whatever it is, I don’t blame you. The good news is that dinner’s ready. 🙂

RAVIOLI WITH CHICKEN, PESTO, AND PEAS
1 store-bought roasted chicken
1 package cheese ravioli
1 1/2 C frozen peas
1 container store-bought pesto
Parmesan cheese – shredded, grated, or both

Cook ravioli and peas according to package directions. You can strain them together in one colander. Cut roasted chicken into bite-sized pieces. Toss pasta, peas, chicken, and pesto together in a large bowl. Top with parmesan cheese.

Obviously, you can do this with any pasta, vegetable, and sauce (and any combination thereof) that you like.

I feel like a cheater cheater pumpkin eater to even blog about this… but it is so convenient, so quick, so good, and I like you so much, I thought I’d share.

xoxo,
Hannah

I just handed the laptop to Bert and had him read this one! He is making this tonight since he’s staying home with the sick baby today while I go to work. I’m so excited!! He is confident he can handle this one! I can’t wait to get home and eat! Thanks Hannah!!

This is by far the easiest dinner EVER! The grocery store did not have the ravioli so I used the same brand tortellini. My hubby who is the pickiest eater loved it!!! Great meal for when you do not have much time to cook….Thanks! I will cook this again for sure!
