    Do you like PBS? I sure do. Not only am I the world’s biggest Mister Rogers fan, but also, my mama has worked at Kentucky Educational Television, Kentucky’s PBS network, for 25 years. Twenty-two years ago, she was one of the founders of Summer Celebration, a fantastic party KET throws every June to help raise funds for its programming. Mama says there were about 150 people at that very first party. This year there were 1200 revelers in attendance, and the party spun around a very festive Renaissance theme. Best Wench Friend Jenny was my date, so we grabbed our lutes, cranked up the madrigals, and got our House of Tudor on.

    The party was hosted at Donamire Farm, one of the most beautiful horse farms in the Bluegrass. Here’s what we were forced to look at on the drive into the party.

    I know, it’s hideous. I don’t know how we managed to stare at it with our jaws hanging open for so long.

    This guy greeted us as we entered the tent. I made Best Friend hop over and take a photo with him. I didn’t tell her to pose with her hand on his sword, but I like her style.

    Outside the tent, there was jousting.

    Things were buzzing inside the party tent too.

    At the buffet table (you know where to find me), I ran into my friends Linda Breathitt and Jim Gray. Jim is running for Mayor of Lexington, and if you are a Lexingtonian (or a Lexingtonienne), you should vote for him this fall. Hey, Linda and Jim!

    I also ran into The Lexingtonienne readers Meg (hey, Meg!), Kelly (hey, Kelly!) and Cheryl (hey, Cheryl!) I didn’t get their photos, but I did get photos of build-your-own cheesecake, obvi. Props to Best Friend for her excellent chocolate drizzle work. She used to work in a bakery, you know. If you’re nice, I bet she’ll give us her recipe for her banana chocolate chip muffins.

    The most exciting part of Summer Celebration is the Silent Auction. Hubba Bubba donated an item that sold immediately (if you want something so bad that the back-and-forth of the auction will give you a coronary, there’s a “buy it now” option, but you have to pony up).

    Uncle Josh will be going to dinner with the lucky winner of this auction item. He’ll probably cook the person an organic gourmet meal — hahahahaha! Ohhhhh, just kidding.

    I really wanted this painting by a local artist whose name I failed to get, probably because it was already out of my price range on my very first go around the auction circle. If someone happens to know who painted it, please leave a comment and let us all know!

    Have you seen Miss KET herself (a.k.a. my mama) yet? Here she is at the party with her friend Hilma. (Mom’s on the right, flashing the smile that says, “I have a cabinet full of Smarties, Hot Tamales, and Reese Cups at my house!”)

    As you can see, not only does KET know how to put fabulous educational programming on the air, but they can also throw one rockin’ party. I’m not sure how much this year’s Summer Celebration raised in total… if anyone knows (ahem… Mama?) please let us know in the Comments.

    And one last thing… I am thinking about my Seester today. It’s her first day back to work from maternity leave. Wish her lots of luck! Here she is with Cooper last Friday.

    You will find this very hard to believe, but on occasion, I have been accused of going to a great deal of trouble over things like cooking dinner.

    Well excuuuuuuuse me.

    Maybe a day spent in the kitchen makes me happy 😀

    (But you know what’s not happy? Spinach. My friend Amelia’s mom thinks it’s downright depressing. You start out with so much…

    … yet you end up with so little.)

    Sorry, guys, Debbie Downer temporarily took over the blog. Beat it, Debbie. As I was saying, I love cooking all day. But some days you have other things to do, such as taking your biweekly bath and writing blogs.

    Or perhaps you are going to visit your friend Ashley who you’ve known since the sixth grade and who just moved into a super cute new house, and you want to bring dinner over but don’t want her to think that living in California has made you complicated.

    And maybe Ashley has a gorgeous one-year-old daughter named Aubrey, and we all know that mamas don’t need you invading their kitchens and making a mess.

    So instead of turning Ashley’s kitchen upside-down, you prep everything at home. That way you can show up at Ashley’s looking like some kind of culinary fairy godmother. Bippity boppity booya.

    Wasn’t that easy? That prep didn’t take you but about twenty minutes, so you had plenty of time for that biweekly bath you were dead-set on taking, whether you needed it or not. And when you get to Ashley’s house, you have time to squeeze Aubrey’s faccia bella (“beautiful face” in Italian – Mike’s grandmother Eleanora always said it).

    At Ashley’s house, all you have to do is spoon some cream of mushroom soup over the chicken breasts (who do you think you are — Paula Deen?), pop them into the oven, plop the zucchini into a buttery saute pan, and imbibe a delightfully frosty beer.

    It is SO. EASY. But the rice recipe is complicated. I debated whether or not you could even follow it. If you’re up to the challenge, here it is:

    Hey, I never said I was watching your sodium intake. You’re on your own with that.

    So anyway, when you don’t have all afternoon to spend in the kitchen, this is a good way to go. There are a lot of ingredients, but the steps go fast. And I totally made up this recipe, which means you can do any variations you like and it will turn out GREAT.

    MEDITERRANEAN STUFFED CHICKEN BREASTS
    1 chicken breast per person, pounded thin
    1/2 onion, chopped
    1-2 cloves of garlic, finely chopped
    1 bag baby spinach
    1 roasted red pepper, chopped
    1/2 small can chopped black olives
    1/2 C crumbled feta cheese
    salt & pepper to taste
    red pepper flakes to taste
    1 can condensed cream of mushroom soup (reduced fat, low sodium – any kind will work)

    Preheat oven to 400. Saute onion in olive oil until onions are tender. Add spinach, cook down to a sufficiently depressing level. Stir in garlic until heated and fragrant. Remove mixture to mixing bowl. Add roasted red pepper, olives, feta, S&P, and red pepper flakes and combine until thoroughly mixed. Salt & pepper your chicken breasts. Divide mixture evenly among chicken breasts, roll up, and place in baking dish sprayed with cooking spray. Spoon cream of mushroom soup on top. Bake, covered, for 30 minutes, then remove cover and bake about 15 more minutes, or until chicken is firm and sauce is bubbling.

    SAUTEED ZUCCHINI AND ONIONS
    1-2 zucchini per person (depending on the size of your zucchini and the size of your eaters)
    1/2 onion per two people
    salt & pepper to taste
    grated parmesan cheese to taste

    Slice onions and zucchini. Melt butter in saute pan over medium-high heat. Add onions, cook for a couple of minutes. Add zucchini, cook and stir until onions begin to caramelize and zucchini reaches desired doneness. Season with S&P. Remove from heat and sprinkle parmesan cheese on top.

    Over the past several weeks, The Hubs and I have been to THREE fabulous weddings celebrating the unions of some of our closest friends. Here are some highlights from the joyful occasions.

    JENNY & ART IN MALIBU

    Jenny & Art were married at the Adamson House, a gorgeous estate nestled by the Pacific Ocean.

    Lots of colors everywhere…

    And there was dining al fresco, by the ocean, with beautifully decorated tables. Each table was a little bit different. I totally stole a peony off of one at the end of the night.

    The crowd was SO. INTO. IT.

    But Art & Jenny weren’t so sure about THIS part:

    Dinner was a better moment.

    MELISSA & MARK IN SANTA BARBARA

    Melissa & Mark said their I do’s at Trinity Episcopal Church and celebrated afterwards at the Four Seasons Biltmore. This is the same hotel where The Hubs and I got engaged, and it’s pretty amazing.

    I love a church wedding. This was the first one we’d been to since our own 🙂

    They had hilarious life-size cut-outs made of themselves, which, fortunately, made their way to the dance floor.

    MARY BETH & MARTY IN CHARLESTON

    Does it get any better than historic Charleston? More on that later. Mary Beth & Marty made it official at the Palmer Home, a stunning bed & breakfast perched right on the Battery.

    Hot pink accents everywhere…

    The Palmer Home’s Battery view offered the perfect backdrop. During the reception, a light rain began to fall while the sun was still shining, and a gorgeous rainbow stretched itself across the sky over the Cooper River. It was like their wedding day winked at them. Of course I didn’t have my camera on hand at that moment, so you’ll have to take my word for it.

    Below, the bride and groom are sitting on a joggling board — a super fun seat you see on porches all over Charleston. This was Marty’s wedding gift to Mary Beth. He even put hot pink bows on it. Good boy.
