We have not been in the kitchen in a little while. In fact we have not even been to the grocery store.

We had a visit from my dad and stepmom.

And it was really beautiful here over MLK weekend so we spent some time outside.

And Eleanora — now 5 1/2 weeks old — has been up to her usual shenanigans, including exceptional cuteness and general peanut-itude. She also poops like 10 times a day. Is or was anybody else’s baby like that? I have tried to tell her that some babies only poop like once every 3 days, and that she is cordially invited to jump on that bandwagon. So far she has declined the invitation. As a matter of fact, she repeatedly declines the invitation throughout the day and night.

On that note, we are going to try to think of some (super easy) recipes to get us back into the kitchen next week. We’ll keep you posted.

    Hi Hannah, Here’s a super easy (SUPER) easy recipe. It’s so simple it might be too humble for your culinary tastes. But, it’s colorful and somewhat nutritious and the ratios can be off and it will still taste good. It also probably uses things you have in your pantry/fridge. So right now this may help you out.

    In a bowl, combine:
    1 can of black beans, drained;
    1 can of corn, drained (you can sub in thawed frozen corn if you freezer is in better shape than your pantry, like mine);
    a few chopped-up slices of roasted red pepper (you probably still have a jar somewhere, right?)

    Toss with salt, pepper, cumin, bottled lime juice, hot sauce, etc. if you have them and feel so inclined.

    You can serve as a topper for nachos (using tortilla chips and melting whatever cheese you can find on top); a filling for wraps (using tortillas or pita bread); or just a standalone salad (it’s pretty and colorful and tastes best if you let stand in refrigerator for an hour first).

    Pretty humble but it’s my go-to if all else fails, because I generally always have a can of beans, some corn, jarred red pepper slices, salt/pepper, bottled lime juice, and tortilla chips on hand…
